All tea comes from the Camelia sinensis plant. Based on the method of production, teas can be divided into three categories: black, oolong and green.
Oolong Tea leaves are picked on a clear morning, in units of 1 bud and 3 leaves exposed to the sun. They are then dried indoors to promote fermentation, until a cruicial point of semi-fermentation. Experienced individuals identify when the leaves are 30% red and 70% green. They are then rubbed repeatedly to generate good flavour, aroma and texture. Charcoal is used to complete the drying process.
